Glutathione — gamma-L-glutamyl-L-cysteinyl-glycine, CAS 70-18-8 — is a tripeptide with an atypical gamma link and the most abundant small thiol in mammalian cells. That gamma bond between glutamate and cysteine makes it resistant to standard aminopeptidases, while the free thiol on its cysteine performs its redox chemistry.
Within cells, GSH supplies electrons to glutathione peroxidases, is conjugated to substrates by glutathione S-transferases during phase II detoxification, and keeps protein thiols in their reduced state.
